Hello friends and fellow cooks. Today I am sharing with you a quick and easy recipe that is a personal favorite of mine, the Quesadilla.

This recipe is very simple to make and only needs a few simple ingredients.

As a very busy mom of four children, ages 15 to 10 months, I don't have a lot of free time to make elaborate meals.

Between diaper changes, bottles, home school, and appointments, I have to find meals that are quick and easy and still taste good.

This recipe makes my top 10 for easy and quick and delicious.

This recipe is a favorite of mine not only for the convenience but also because it is made with simple ingredients that my body can handle.

What do I mean by this? I suffer from a life long disease. Crohn's Disease.

If you aren't familiar with Crohn's Disease, it is a long term inflammatory disease of the entire digestive system.

There are some foods that my body just can't digest. If I were to eat any of these foods, it could put me on bed rest or land me in the hospital for a week on a nothing by mouth diet until my colon heals.

I have had to learn to make and find foods that my body can handle.

I love Taco Bell, but their food is made with other ingredients (seasoning included) that I can't eat.

This recipe is a perfect substitute if you love Quesadillas.

A Perfect Substitute

If you love Quesadillas and Taco Bell, this recipe is a perfect substitute for you.

This recipe is made with only simple ingredients and if you are like me and suffer from digestive issues, should be easy for you to digest.

I am always looking for and trying new things that my body can handle.

Sometimes it doesn't always work out in my favor but I have to try. If it bothers me, I make a note in my food diary so I am sure to stay away from those foods.

Over the years, I have learned what works best for me, for the most part, and I stick to it.

I have always loved fast food, but sometimes there are hidden ingredients that I don't know about and it renders me unable to eat for days because I am in so much pain.

It could be something so simple such as a seasoning.

I have learned over the years that the best way for me to stay healthy and confident that what I am eating will digest easily, is to make my food myself.

Simple, Easy and Filling

As a busy mom of four children, ages 15, 5, 3, and 10 months, I have very little free time.

When lunchtime comes around in my house, it's chaos.

Diapers need changing, toddlers are running through the house screaming at each other, and my oldest is needing help with homework.

This recipe is a go-to for me. In less than 20 minutes I can have 5 quesadillas made and cut, and on the table.

You Can Change It Up

Another great thing about making a quesadilla at home is you can mix and match ingredients.

You want just a plain cheese quesadilla, then follow this recipe just as it is.

You want a chicken quesadilla, that's easy to do, just add some sliced or shredded chicken.

You can make it spicy or tangy.

Add some Jalapeno's or add some sliced avocados with a squeeze of lemon juice or lime juice.

The possibilities are endless.


2 tortillas per quesadilla
1 (16 oz) package of six blend cheese
nonstick cooking spray


1. Heat a skillet (I used cast iron) to medium heat

2. Spray the skillet with nonstick cooking spray

3. Lay one tortilla flat in the bottom of the skillet

4. Spread the six-cheese blend over the top of the tortilla

5. Cover with another tortilla

6. Once the bottom tortilla is browned on the bottom, flip it and brown the other side

7. Once browned and the cheese is melted, remove the quesadilla from the skillet and rest it on a cutting board. Let it rest for 2 minutes before cutting.

Optional: You can add any other fillings you prefer. Sliced or shredded chicken, Olives, Avocados, pepperoni, sausage, chickpeas, etc.

Tips: If you are making a variety tray of these for a party or for your family, I suggest putting one small piece of each filling on top so everyone knows what each one is filled with.
For example: If you are making a tray of banana pepper filled quesadilla, then just top each one with a small piece of banana pepper. Or if you are making a red pepper filled one, then just top each one with a small slice of red pepper.

Perfectly simple and delicious. All I need is some soup or a salad to go along with this for a satisfying meal!
