Cannoli Dip and Chip Recipe

I really love the cannoli filling in a cannoli, actually more than anything else about them. So why not use as a dip instead of all that hard work of making the shells, filling them and then they are gone in 60 seconds! Well here is my easy fix, I am happy as can be with this mock-up dip and chips!

What You Need:

  • 1 Cup Whole Milk Ricotta Cheese
  • 1/2 cup Powdered Sugar or more to taste if you like sweeter
  • 3 Tablespoons Mascarpone Cheese
  • 1/4 Teaspoon Cinnamon
  • A handful of mini chocolate chips and some for garnish
  • 1 teaspoon of quick cooking Tapioca
  • Waffle bowls found in the ice cream section of your supermarket
  • Any good grade Chocolate for dipping
  • Sugar or Ice Cream Cones

Mix all ingredients in a medium sized bowl until well blended except for the waffle bowl (that is what you serve it in). Refrigerate until cold. In the meantime, dip the waffle bowl edges in melted chocolate. Place in refrigerator until firm.  Then fill your waffle bowl that has been dipped in melted chocolate with the cannoli dip mixture. Serve with broken ice cream cones to dip with. ( I recommend sugar cones, you can also dip them in melted chocolate before serving then break them into pieces.) If you can't find the waffle bowls, you can make your favorite pie crust and bake in a small pyrex bowl. Cool, dip the edges in melted chocolate and put the filling that as well.
Enjoy!

Supermarket Style Loft Cookies

One of my favorite cut out cookies and those soft loft cookies you find in almost every supermarket decorated for whatever holiday theme is going on. You can make Christmas, Halloween, Valentines, anything you want. These are just a great dough so versatile to work with. Kids love these cookies and often eat all the frosting off before the cookie, you may know someone just like that! The frosting is buttery and delicious along with the cookies. If you love loft cookies try my soft peanut butter molasses cookies also they are so good! This is a simple recipe that will be your new favorite cookie all year long.
