Cheesy Breaded and Roasted Vegetable Recipe

Easy recipe done on a cookie sheet, season, bake that's it!  If your looking for something tasty and fast this is the way to go. 

Vegetables suggestions to cut up:

 broccoli, sliced carrots, mini cob corn,  thinly sliced potato, cauliflower, sweet or regular potatoes,  string beans, mushroom, zucchini, eggplant, brussel sprouts, sliced cabbage, yellow squash, or whatever  else you like

Italian flavored bread crumbs
grating cheese, a blend is perfect of asiago, parmesan, romano
Olive oil
salt, pepper to taste

Sprinkle with dried oregano, basil, parsley and use garlic powder on top evenly just a little over the top.

In a large bowl add the vegetables your going to use. Toss with around 2 tablespoon olive oil and spread on a cookie sheet.

Sprinkle top with salt, pepper to taste, generously sprinkle with cheese, herbs and garlic powder the top then bread crumbs then drizzle evenly with more olive oil.

Bake at around 375 degree hot oven until browned around 35 to 45 minutes depending on the thickness.
