Ingredients and things you'll need:

2.5 lbs. Sliced Thin and Pounded Chicken Cutlets or Breasts
1/4 Cup Italian Style Bread Crumbs
Fresh Whole Milk Mozzarella
Premium Extra Virgin First Cold Pressed Olive Oil
1/4 Pound Premium Cappicola

1/3 Cup Of Rhine Table Wine
2 Tbsps. Of butter or Margarine
1 tsp. Fresh Ground Black Pepper
Toothpicks to hold together

Instructions:
Start by flattening out your chicken try not to let the chicken separate while flattening. Once that's done layer the ingredients in this order: Cappicola, Crispy Bacon, tablespoon sized amount of fresh mozzarella and then roll as shown. Toothpick in several places to ensure it will hold together and stay put during the baking process. Place all pieces into a baking dish. Next drizzle your olive oil over the top of the chicken rolls, dust with your fresh black pepper and your Italian style bread crumbs. Pour 1/3 cup of Rhine wine into bottom of casserole dish along with the butter or margarine. (Doesn't need to be melted the oven will handle that for you :) )

Preheat oven to 425 degrees. Bake until golden brown and thoroughly cooked roughly 30 to 40 min in conventional ovens but also depending on how thick your chicken is.

Select your favorite drinking wine to go with the dish preferable to me was Cabernet.

Suggested Sides:
Parmesan Egg Noodles
Mashed Potato Croquettes
Dessert: Pumpkin Mini Trifle

ENJOY!!!
